CREAM OF PUMPKIN SEEDS WITH CHICKEN
This traditional cream of pumpkin seeds with chicken recipe is prepared with pumpkin seeds, has a great taste and texture. It is one of the most typical Mexican foods.

Ingredients:

100 grams of Pumpkin Nuggets

2 Tablespoons of Sunflower Seeds

2 Tablespoons of sesame

50 Grams of Peanuts

500 Grams of Chicken

1 tomato
-
1 onion
-
1 Chile wide
-
1/2 Tablespoon of oregano
-
1 tablespoon of salt

1 Tortilla
-
1/2 cup vegetable oil
Preparation:
In a pot we cook the chicken with the tomato, half onion, the broad chili and a little salt.
In a Comal or frying pan the pumpkin seeds and peanuts are toasted, when they have a golden color need to be removed from the fire and the sesame are toasted with the sunflower seeds, I do not put them together because the sesame and the Sunflower seeds are roasted faster. The seeds should not be burnt because their taste becomes bitter.
The other half onion is cut into large pieces and it’s roasted, by this way it gives a delicious different taste to the cream of pumpkin seeds with chicken dish.
In a pot add the oil and put the tortilla just a little, this is a tip of my grandmother; she says that the tortilla gives good seasoning oil.
In the blender put the cooked tomatoes, the roasted onion, wide chili, roasted seeds, a cup of chicken broth, oregano, salt and the fried tortilla that besides increasing the flavor of this pipian gives a thicker texture, we liquefy it until we have a creamy sauce.
We add this creamy sauce in the oil where we fried the tortilla, mix and add another cup of chicken broth, let it cook for ten (10) minutes so that all the ingredients release their flavors and integrate. If the consistency is very thick, you can add more broth.
The bones of chicken are removed, also fatty parts or veins to leave only the meat that we will put at the end all cream of pumpkin seeds with chicken in the dish and then is decorated with pumpkin seeds.
