Exquisite enchiladas covered with Pumpkin cream

Exquisite enchiladas covered with Pumpkin cream

Recipe for: 2 (two) people:

 

Ingredients:

  • 1/2 Kg of Pumpkins

  • 1/2 Chicken

  • 200 grams of manchego cheese

  • 100 grams of Cotija cheese

  • 150 grams of acid cream

  • 1/2 Kilo of corn tortillas

  • 1 Potato

  • 1 cup Vegetable oil

  • 50 Grams of Pumpkin seeds

  • 6 Tree Chilies

  • 1 clove of garlic

  • Salt to taste

 

Preparation:

 

In a pot with water the chicken is cooked without the skin, pumpkin is cut in large pieces and without shell, potato, chilies without stem or seeds, garlic and salt is added.

The pumpkin seeds are roasted, when those become golden color add a little salt, this is in order to get a tasty snacks.

The seeds also needed to be cook to brown pumpkins; those will give the flavor and texture to the pumpkin cream which one we will cook together with the cream then we can get the exquisite enchiladas covered with Pumpkin cream.

I buy the pumpkin seed already peeled because it is very difficult to remove the shell.

We liquefy cooked pumpkin with garlic chilies, toasted seeds and a chicken consommé cup.

The potato is cut into small squares and the cooked chicken is removed from the bones and separated into thin strips.

In a saucepan, heat the vegetable oil or coconut oil and the tortillas are passed through the oil without browning, this will make the pumpkin cream adhere better to the tortillas and to be soft then the tortillas will not be broken when doing the enchilada tacos.

Put to fry garlic, the potato squares and the chicken in oil. They are removed from the pan and in the oil which was left we put the pumpkin cream; its flavor improves to be stewed and takes a more intense color. We are almost done with this recipe of exquisite enchiladas covered with pumpkin cream.

Pub a slice of cheese in the tortilla and one or two tablespoons of the chicken with potatoes then we need to wrap those, forming tacos that are placed in a tray or bowl, when all the tacos are put in the tray, we need to cover those with the pumpkin cream.

These exquisite enchiladas covered with pumpkin cream are served and garnished with sour cream and cottage cheese or fresh cheese.
