Medallions Fish with Asparagus

Recipe for 2 people

This Exquisite Fish with asparagus in medallions is ideal for a romantic dinner.


1/2 Kg of fish cut into thick medallions

1/2 Kg of asparagus

2     Tablespoons dried parsley

1      Spoonful of dill

6      Cloves of garlic

1/4  Cup of balsamic vinegar

1/2  Cup olive oil

1      Tablespoon butter

1      Lemon

        Salt at your taste

        Pepper at your taste



For the sauce in which one the fish is marinated it is needed to put in a deep bowl, ¼ cup of olive oil, balsamic vinegar, chopped garlic, parsley and pepper, it is mixed and we incorporated the fish pieces with the vinaigrette in all its parts and let it marinate meanwhile the other ingredients are prepared for getting the Exquisite Fish with asparagus.

We cut the bottom of asparagus since it’s the hard part of it and then with peeling kitchen tool we remove part of their shell also from the bottom of asparagus due it is also little hard.

Put in a pot on medium heat to pre-boil in water for five minutes. Can you see how this Exquisite Fish with asparagus is becoming so delicious? Let’s continue.

For the vinaigrette which one will be used for dressing the asparagus we will put in a container, olive oil, garlic, lemon juice, pepper, dill and salt.

For that remove the asparagus from the water and spread them with the vinaigrette

In a frying pan over medium heat melt butter and put the asparagus to fry during three minutes.

Remove those from stove and put in a platter which will be the base of these fish medallions with asparagus.

In a pan over high heat add olive oil and put the fish medallions to fry, turn them carefully and when they are sealed put low heat in order to finish the cooking. With sealing the fish will not lose its juice.

Remove from the medallions from the pan and place those on the asparagus.
