Fish With Purslane
Recipe for 4 people
1/2 Kilo of sailfish medallions
1 Bunch of purslane
2 Red Wide Chilies
3 Tree Chilies
2 cloves of garlic
1 tablespoon of salt
1 Bucket of shrimp consommé
1/4 cup olive oil
Broad chilies are removed from the seeds and veins, which is the spicy part of the chilies. They are put in a pot to cook together with the two tomatoes and the tree chilies, for ten minutes
The fish cut into medallions is marinated with salt, a little olive oil and garlic finely chopped and set it aside, let it marinate while we prepare the rest ingredients.
The purslane are removed only the leaves the stem we separate, once we have only the leaves are washed and disinfected.
When tomatoes are already cooked remove the skin and put in the blender with water along with the red wide chilies, the tree chilies and the bucket of shrimp consommé, this ingredient is optional, can be substituted with chicken consommé that Is the most common and in all kitchens it is used.
In a frying pan on high heat the pieces of fish are put to fry a little by all sides, this is made in order that the fish maintains its juice and does not leave it in the broth of the purslane. This is a tip for the Fish with Purslane to be tender and juicy and at same time well cooked.
Cut the onion into slices and then cut the slices crosswise, then you have the onion in strips
The carrot is cut in julienne, to give a greater presentation to the dish; it is easier to cut it with kitchen special utensil which is practical.
In a pot with little oil put the onion to roast till it becomes light golden color you can see that is when it changes color and becomes a little transparent. Add the carrot in julienne and let it roast a little. The recipe of this Fish with Purslane is almost done, lets finish it.
