Fish with shrimp to Achiote, annatto
Recipe for two people
1/2 kilo of fish fillet
1 Bucket of achiote in paste
1 Red bell pepper
1 clove garlic
1/2 cup white vinegar
Preparation of fish with shrimp to Achiote, annatto.
It is cooked in banana leaves, this gives a unique essence that combines perfectly with all the ingredients.
To make the sauce with which we are going to marinate the fish, we put the vinegar, the orange juice, the annatto paste and the garlic clove in the blender and liquefy.
Finely slice the onions, green bell pepper and remove the shells from the shrimp.
Place the banana leaves on a plate.
Add the fish and cover with the annatto sauce.
Add the slices of onion, the red pepper, the shrimp, slices of orange, pepper and salt to your taste.
Wrap very well with the banana leaves and let it marinate for 10 minutes.
To cook it on the stove we put this preparation in a covered pan and let it cook at low heat for about 20 minutes, this depends on the size of the fillet.
If we want to cook in the over, we cover the fish with shrimp to Achiote, annatto with foil and we put it to cook at 350 degrees for 20 minutes.
