I have been a vegetarian for four years and in my kitchen there are always portobellos. I prepare them in many ways as you can see in my videos. There are so many ways to cook them and in my videos you will see variations such as portobello rellenos, hamburgers, omelets and many, many more.

To clean the portobellos we remove their skin by holding each one and making a gentle twist. With this method, the skin comes off very easy. We also can remove the skin by holding it with our fingers and pulling back from the edge.
The protobello’s fungi will absorb all of our spicy liquids very well. This is the reason why we do not wash them in water because they fill with the water and then they cannot catch the seasoning of the other ingredients, they become insipid.
That is why when marinated the mushrooms very quickly suck in the flavors from the sauces we use to cover them. They are like sponges. The combination of their flavor with the flavors of the marinades makes for an explosion of taste.
