Ingredients for portobello fajitas

3 Portobellos

1 medium onion

1 Pimiento Morrón

1/2 cup olive oil

1 Bunch of cilantro

1 cup of tomato paste

1/2 Tablespoon ground pepper



The onion is cut into strips, first cut the slices and split them in half to obtain the strips of the same size in width.

The red pepper is cut at the top with a knife, the seeds and veins are removed, the cuts are made to remain the same size as the onion.

Put a frying pan over medium heat and add a little oil, add the onion and peppers, add a little salt, let it fry until the onion becomes transparent and begins to take a light golden color that Will give more flavor and sight to the fajitas of portobello, this cooking will take five minutes.

The portobello is clean by removing its center, turning it is very easy to detach, the skin is removed, not washed in water. They are cut into medium pieces to give the same size to the portobello fajitas. Put them in a bowl, add the pepper, a little salt, the olive oil and the tomato paste, stir so that all the pieces are anointed with this mixture.

The onion and pepper are removed from the frying pan and there they cook the portobellos, stirring for even cooking, when they release their liquid is added finely chopped cilantro.

Leave one more minute to integrate the flavors and remove from the fire.

In a platón we put the portobellos and we add the onion and peppers, they mix well and they are served to enjoy these delicious fajitas of portobello.

Prepare some tacos or quesadillas, they can be made with corn tortillas or wheat flour and Manchego cheese.
