PUMPKIN WITH TASTY PORK RIBS

Pumpkin with tasty pork ribs is a tasty and nutritious food

Its ingredients combine perfect giving as a result this excellent food.

Recipe Portion:  four (4) servings

Ingredients:

Pumpkin with tasty pork ribs

  • 500 grams of pumpkin pulp

  • 750 grams of pork ribs

  • 3 Tomatoes

  • 1 Yellow Chili

  • 1 onion

  • 3 garlic cloves

  • 1/2 cup of vegetable oil

  • Salt as per your choice

  • Pepper as per your choice

 

Preparation:

In a frying pan, on medium heat, put the oil, for this pumpkin with tasty pork ribs recipe we use the coconut oil, but you can use the oil of your preference or the lard of pork.

Put the pumpkin in the microwave to cook for fifteen (15) minutes at maximum power.

Add the pork meat you can choose the way you cut it, in this case we cook it with pork ribs.

Put salt and chili; let it to be fried over low heat while we prepare the other ingredients.

The onion is cut into small squares with everything and its tail; we make the same with the garlic, the chili and tomato. 

The cooked pumpkin is cut by making a circle on its top side; we will use it as the bowl of the stew. Although the pumpkin is cooked it keeps the firmness in its shell.

With a large metal spoon the seeds are removed with the strings or called pumpkin spaghetti, we separate from the seeds and liquefy with a little water.

Cut the pulp with a knife taking care not to drill the outside pumpkin part or shell, remove it with the spoon, trying to remove whole pieces that are cut into small squares.

To the fried ribs we add the onion, garlic and the chili, when those are light brown & semitransparent we incorporate the tomato and the pumpkin squares then we add the pumpkin spaghetti that we liquefied previously.

Stir everything and cover it and to let it cook in very low heat.

Pumpkin with tasty pork ribs will be cooked in twenty (20) minutes and it is done!
