Roasting and peeling poblano chiles for my family has a very long history. There are so many ways that my my mother and grandmother would go about Roasting and Peeling Poblano Chiles, it would sometimes cause big arguments between the too, but for all of the family, the good news was that when we sat down together at the table, the dish was delicious beyond belief.

First turn your stove on high heat and put the chile right over the fire.
Roast it all around until it is completely roasted. I’m using my hands, but you can use some tweezers or a fork so you don’t burn your fingers.
It’s almost done, it’s very quickly. You can hear it sounds almost like popcorn
Then just put it in a plastic bag and cover it with a kitchen towel.
So, as the chile is still warm, it will keep on cooking a little longer.
Once it’s completely roasted put the chile under water. And there you can peel it off.
If you put a little bit of oil in your hands that will prevent the chile from irritating your fingers
You can see how easy it comes out.
It’s now ready to make some filled chiles or some tasty rajas.
Now, I used her recipe using different tools than she did, but it still comes out great.
HOW TO ROAST AND PEEL POBLANO CHILE
The poblano peppers can be roasted on a comal or directly in the fire of the stove with the high flame, once they are completely roasted we put them under the waterjet to remove the skin, it is very easy to detach and its skin is falling in the drain of the sump facilitating the cleaning.
I recommend smearing some cooking oil in your hands to avoid spice irritation.
