Romeritos With Mole

For 4 people



1/2 Kilo of Romeritos.

1 chicken breast fillet

1/2 Kilo of Nopales


1/2 Kilo of Popes

1 onion 1/2 chopped and 1/2 slice

2 lemons

1/4 cup vinegar

1 pinch of ground oregano

1/4 Mole’s Pasta

1 cup chicken broth

1/2 cup peanut butter


Preparation of Romeritos with Mole

The chicken breast is marinated with peanut butter and salt for 1 hour.

The chopped onion is left to deflate in lemon juice, vinegar, salt and oregano.

The Romeritos are cleaned and steamed so that they do not lose their beautiful color.

Cutted nopals in squares are cooked in very little water with coriander and salt.

The potatoes are cooked in water or in the microwave are peeled and cut into small squares.

Fry the chicken in butter and cut into strips.

In a pot fry the onion with the fat left by the chicken, incorporate the potato, nopales, romeritos and salt to taste.

In the blender liquefy the mole with chicken stock and add it to the pot.

Carefully stir everything and add more broth if the mole thickens.

Let cook for 5 minutes to integrate all the ingredients.

Served Romeritos with mole with sliced onion and enjoyed.
