Mexican Fish Meatballs

 

Welcome to cooking with Mexican flavor. Now we’re going to prepare Mexican fish meatballs.

This recipe is for two persons.

Our ingredients are:

Tomato, onion, carrot, an egg, bread crumbs and salt.

To start our Mexican fish meatballs, in a pot, we put the tomatoes to boil.
In another steam pot we cook the chopped vegetables, it is better to steam because they retain their nutrients and their color. I put pumpkin, potatoes, carrots, broccoli, chickpeas and spinach.

To continue with our Mexican fish meatballs, in a big plate, we make the preparation of the meatballs, we put the fish (cut into very small pieces), we add one egg, half a cup of grated carrot, half a cup of coriander, the bread crumbs, and we stir.

With your hands, it’s okay.

We mix all the ingredients together until they are all blend in.

Add a little bit of sea salt. I like to cook with grain salt, not fine grounded, it has better flavor, sea flavor.

Now in a frying pan on high heat, we put some oil and fry the meatballs. We seal them well so that they do not get torn apart in the broth.

Now we proceed to liquefy the consommé with the cooked tomatoes to which we have already removed the shell. These cubes of shrimp consommé give them a very nice flavor and this is the consommé that we prepared with the shells of shrimp, see the nice color it takes?

Now in a pot we melt butter, in this butter we will stir-fry the onion and the garlic, when these become transparent, you’ll be ready to add the consommé with the tomato that we liquefied, we add the sauce and we leave it to stew.

My family love this food, and even more when it is cold, because eating it gives the body a special warmth due to all its nutrients.

Let it boil for a few minutes, add the vegetables we previously steamed, see what a nice color they have.

When steamed, they do not lose their color or all their nutritional values. Do not throw the water where they were cooked, there are also many vitamins.
